1) In a large soup pot or Dutch oven over medium-high heat, brown the beef cubes in the olive oil until evenly cooked. Remove from pot and set aside.

2) Add the onion, carrots, celery, garlic, beef broth, tomato paste, thyme leaves, bay leaf to the pot and season with salt and pepper to taste. Bring to a boil then reduce heat to low and let simmer for 30 minutes.

3) Add the browned beef cubes back into the soup pot along with any accumulated juices. Simmer for an additional 15 minutes then add the tubetti pasta. Cook according to package directions until al dente then remove from heat. Discard bay leaf before serving.

4) Ladle soup into individual bowls and top with green onions if desired. Serve hot and enjoy!
