This Beef Soup with Vegetables Recipe is Easy to Make and Super Tasty!

Ingredients:

-1 pound beef stew meat

-2 tablespoons olive oil

-1 yellow onion, diced

-1 carrot, diced

-2 celery stalks, diced

-3 cloves garlic, minced

-1 teaspoon dried thyme leaves

-1/2 teaspoon salt OR to taste. -1/4 teaspoon freshly ground black pepper_OR to taste. -4 cups beef broth, low sodium if available_OR use bouillon cubes+water to make the same amount -1 large russet potato, peeled and diced into 1" cubes. (about 2 cups) I used organic potatoes. If using small red potatoes, then leave them unpeeled. Red potatoes are a bit more filling and nutritious with the skin on. You could also use 2 cups of frozen peas and carrots mix instead of the potato. Frozen veggies will add a nice sweetness and crunch to the soup.

Instructions:

1) In a large soup pot or Dutch oven over medium high heat, brown beef stew meat in olive oil until browned all over. Remove from pot and set aside.

2) Add in onion, carrot, celery, garlic, thyme, salt and pepper to the pot and stir around until vegetables are somewhat softened.

3) Pour in beef broth and add browned beef back in to the pot. Bring soup to a boil then reduce heat to low and simmer for about 1 1/2 hours or until beef is very tender.

4) Stir in diced potato and continue cooking for another 10 minutes or so until potato is soft but not mushy. If using frozen peas and carrots mix instead of diced potato, add at the same time as potatoes and cook for 5 minutes until heated through. Taste test soup and adjust seasoning as necessary. Soup will thicken up upon cooling slightly so you may want to add more broth or water if needed when reheating*. Serve hot with some nice crusty bread! Enjoy :)

Discard the bay leaf. 3) Skim any fat from the surface of the soup with a spoon. 4) To thicken the soup before serving stir in the cold water until desired consistency is reached. 5) Serve in individual bowls and garnish with fresh parsley leaves if desired
