1 lb. beef stew meat, cut into cubes

1 onion, chopped

3 carrots, peeled and sliced

2 cups vegetable stock

Instructions:

 In a large pot over medium heat, brown the beef cubes in a bit of oil until cooked through.     Add the onion, carrots, potatoes, vegetable stock, and thyme leaves to the pot. Season with salt and pepper, to taste.      Bring to a boil and simmer for 30 minutes or until the vegetables are tender.   Serve hot with some fresh bread on the side. Enjoy!
