To start, brown the ground beef in a large pot over medium heat until no longer pink. Drain off any excess grease and discard it. Add the onion and garlic to the pot and cook until softened, about 5 minutes.

Next, add the beef broth and water and stir to combine. Add the diced tomatoes (include their juice), green beans, and carrot. Season with salt, pepper, and any desired herbs. Bring the soup to a boil over high heat, then reduce the heat to low and simmer for 10 minutes.

1 pound beef stew meat, cut into cubes

1 small onion, diced

3 celery stalks, diced

4 cups chicken or beef broth

1 cup green beans, trimmed and cut into bite-sized pieces

1 cup corn kernels

Instructions:

  1. In a large pot or Dutch oven, brown the beef cubes in a bit of oil over medium-high heat. Remove from pan and set aside.

  2. Add the onion, carrots, celery and garlic to the pot and sauté until vegetables are soft. 3. Return the beef to the pot along with the broth. Bring to a simmer and cook for 30 minutes. 4. Stir in the frozen mixed vegetables and simmer for an additional 30 minutes. Serve hot with crusty bread or rolls.
