  • Stovetop Directions : In a large saucepan over medium heat, brown the beef stew meat with the onion and garlic. Drain off any excess fat. Add the carrots, celery, bell pepper, beef broth, water, thyme, basil, salt, and black pepper. Bring to a simmer and cook for 30 minutes. Stir in the tomato paste, diced tomatoes with their juice (or canned tomatoes), corn kernels, green peas, parsley leaves, and basil leaves. Simmer for another 15 minutes or until the vegetables are tender.

In another bowl, combine the carrots, celery, bell pepper, beef broth, water, thyme, basil, salt, and black pepper. Pour the mixture into a 4-quart or larger slow cooker. Stir in the tomato paste, diced tomatoes with their juice (or canned tomatoes), corn kernels,, green peas,, parsley leaves,, and basil leaves.. Cover and cook on low heat for 8 to 10 hours or on high heat for 4 to 5 hours,.
